Tresse: A Unique Restaurant and Bakery Design

Creating a Space that Connects Sports, Community, and Food

The Tresse restaurant and bakery, designed by Hiroyuki Niwa, is a one-of-a-kind establishment located inside the Toyoda Gosei Memorial Gymnasium in Inazawa City, Aichi Prefecture. This innovative design aims to create a space that connects sports, community, and food, offering a unique dining experience to visitors.

The inspiration for the Tresse design came from the concept of "and symbol," which represents the idea of bonding and connecting diverse elements. As the restaurant is situated within a sports facility, the menu focuses on serving a healthy diet, while the staff uniforms are designed to be casual, reflecting the building's concept. The design team expressed the connection and mixing of elements through various design features, such as the overlapping ceiling louvers in the hall and the wooden flooring.

What sets Tresse apart from other restaurant designs is its ability to bond elements such as sports, community, food, and corporations. With its high ceilings, the space feels dynamic and liberating, creating an open atmosphere that welcomes the community. The central station counter serves as the core of the restaurant, surrounded by various types of seats that can be arranged to suit different scenes and preferences.

The realization of the Tresse design involved careful planning and attention to detail. The main kitchen is located at the back of the restaurant, with the seating spaces arranged around it. The closer the seating area is to the kitchen, the lower the ceiling height, creating a sense of intimacy. Additionally, the bakery and patisserie kitchen faces a glass curtain wall, allowing the workplace to be visible from outside, adding a touch of transparency to the design.

Technical specifications of the Tresse restaurant include a total gross floor area of 420 sq.m, with seating space covering 292 sq.m. The ceiling height in the hall seating area reaches a maximum of 3.5 m, providing an open and spacious atmosphere. As the ceiling slopes down towards the kitchen, the height decreases to 2.4 m, creating a gradual transition to a more cozy and intimate space.

The Tresse design not only focuses on aesthetics but also on functionality and operation. To ensure smooth operation, the design separates the flow lines of restaurant users and take-out users, with separate counters at the main entrance. Cash registers are also provided at each counter, allowing for efficient service even during busy hours.

The Tresse restaurant and bakery opened its doors in September 2020, following a design project that started in January 2019. The design team faced various challenges, including the need to sophisticate the initial scheme into an integrated design that encompassed not only the interior design but also the operation, menu, restaurant's name, logos, and uniforms. Through their efforts, they successfully established a new brand with a solid concept.

The Tresse design has been recognized for its excellence and creativity, receiving the Bronze A' Design Award in the Interior Space, Retail, and Exhibition Design category in 2022. This prestigious award honors designs that demonstrate outstanding creativity and resourcefulness, incorporating best practices in art, science, design, and technology. The Tresse design contributes to improving the quality of life and making the world a better place.

With its unique concept and innovative design, Tresse is not just a restaurant and bakery but a space that brings together sports, community, and food, creating a vibrant and welcoming atmosphere for all visitors.
